Spelt Christmas Biscuits ️

Tasty, pretty and easy. Perfect for some festive baking with the kiddies. Maybe double batch as I’m not kidding you both Amelia and Nathan have been caught with their hand in the cookie jar robbing the goodies today.

Ingredients

130g butter or alternative 

70g caster sugar 

120g spelt flour

50g rice flour 

Tablespoon of coconut milk

1 teaspoon vanilla essence 

1 teaspoon cinnamon 

Icing sugar for topping


Instructions

Preheat oven to 150 degrees Celsius 

Cream the butter and sugar together until light and fluffy.

Add the flours, vanilla and cinnamon into the mixture and mix until crumbly. 

Pour a tablespoon of coconut milk in and combine until the mixture comes together. 

Roll out mixture with a dusting of flour.

Use cutters of choice, we used stars and snowmen. Then place on baking tray lined with baking paper.

Bake for 30-40 minutes until lightly browning.

Cool and sieve a dusting of icing sugar on top for some added Christmas pretty!
