Green Eyed Goodness

Tasty enough for the kids! This one is a real winner in our house. It's got the vibrancy of the spinach, the sweetness of the apple & the creaminess of the frozen bananas. When i'm making it for myself, I tend to replace the apple juice with coconut water.

Tip: When choosing bananas go for the ones with the brown spots, these are the ripe and are the best for your digestive system. I buy a load and freeze them! Frozen bananas up the game of any smoothy! They are just so creamy, and dare I say reminiscent of ice-cream.

From a nutritional standpoint, this smoothie has got it going on!! The spinach is high in iron, protein, fibre and loaded with vitamins and minerals. The banana is a super carb, high in potassium and vit C and A. My favourite; the avocado are high in antioxidants, a good source of protein, polyunsaturated fat and again loaded with vitamins and minerals. Cucumbers are filled with vitamins, minerals, antioxidants. Enough of the science......get your blender out!!!

Ingredients

Serves 1 adult or 2 smallies

  • Two frozen bananas
  • Half a cucumber chopped
  • One avocado
  • Handful of spinach or kale (stalks removed)
  • Coconut water or fresh apple juice to desired consistency
  • Goji Berries (optional)
  • Matcha shot or a superfood supplement (optional)

Method

Throw it all in your smoothie maker. Add more liquid till you achieve the consistency you like. Personally,  I love a thick smoothie! Here, I topped with goji berries, just cause I was feeling a bit fancy! Gulp, slurp and enjoy!!!
